    Milk Lately I been blogging about the ingredigents and what their functions or role is in baking. It’s important to understand some of the functions for you can be able to trouble shoot a problem. I have had a lot of times when the cupcakes went flat, I had know clue what to do. Getting to know the roles of each ingredients can help you in the long run…  In this blog I’m going to talk about the liquids and what their role is in baking.

    ROLE OF LIQUIDS IN BAKING http://eatmytreat.com/

    A.  Water – Predominate liquid used in bread baking

    B.  Milk

    1.  Usually used in cakes, cookies, cupcakes

    2.  Contains high percentage of water

    C.  Cream – not often used

    D.  Eggs – liquid from eggs must be taken into consideration when calculating total liquid in recipe.

    FUNCTION OF LIQUIDS IN BAKING

    A.  Hydrate dry ingredients

    1.  Required for gluten development

    2.  Moisten

    B.  Dissolve Sugar and Salt

    1.   Aids  activation of leavening agent ( baking soda, baking powder)

    C.  Texture and Shape

    1.  Fats in milk and cream contribute to tenderness and moisture

    2. Increase stability

    3.  Water added to egg whites will increase their volume when beaten

    4. Will make a cake softer

    5.  In cookies a little liquid will help create steam to produce puffiness

    6.  Cause batter to spread producing flat cookies

    D.  FLAVOR AND COLOR

    1.  Proteins and sugar in milk and cream produce

    2.  Browning and softer to crust

    3.  White color of milk and cream enchances interior color of baked goods

    4. Milk add sweetness

    E.  ADDS NUTRITIONAL VALUE

    F.  CONTRIBUTE TO SHELF LIFE
