    Petits Fours


    Today I would like to talk some of Petit Fours. Petits fours include any samll cake or pastry that can be eaten in one or two bites. They typically served at the end of a meal, with afternoon tea, or for buffets and receptions. The term come from the French meaning “small oven“.  the classification of pastries is broken down into three subgroups:

    •  Petits fours glace – traditionally refers to small iced cakes
    • Petitis fours sec – a selection of dry cookies
    • Petitis fours frais – includes fragile, perishable items such as minature fruit tarts, eclairs, cream puffs, cheesecakes etc.

    As a general rule, petits fours:

    • Are no longer than 1.5 – 2″ inches in length
    • Are particularly festive when served in an assortment, including from all subgroups
    • Are visually appealing in shape, color, and decor

    As you see Petits fours and be yummy and delicious and fun to make. It takes alot of patience to decorate them, but in the end they will make a beautiful buffet. Excellent for weddings, anniversary, baby showers, birthday parties.  Happy Baking.
